A Vegan Rhubarb!



Healthy eaters here’s a little recipe that you will sure enjoy!

What you will need:

Rhubarb Cupcakes

2 Cups Chopped Rhubarb, Fresh or Frozen and Thawed
1 Cup Granulated Sugar
2 Tablespoons Lemon Juice
1/4 Teaspoon Salt
2 Cups All Purpose Flour
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
1/2 Cup Orange Juice
1/3 Cup Canola Oil
2 Teaspoons Vanilla Extract

Vanilla Bean Frosting:

1 Cup Non-Dairy Margarine
4 Cups Confectioner’s Sugar
1 – 2 Tablespoons Plain Non-Dairy Milk
2 Teaspoons Vanilla Paste or Extract
